  1. Soak the dried fish in cold water for 5 days, changing the water daily, until it has swollen back to roughly its fresh weight. This stage is only patience.
  2. Now the lye step, and the honest advice: buy it already lyed. A day or two too long in the alkaline bath and the protein dissolves into jelly, and the margin is smaller than a first attempt usually respects. Nordic delis sell it wet and ready in winter.
  3. If you are using ready-lyed fish, soak it in fresh cold water for 4–6 hours to bring the alkalinity down, changing the water twice. Skip this and it tastes of soap.
  4. Salt the fillets generously and leave 30 minutes — this firms flesh that is, by design, on the edge of collapse.
  5. Bake covered at 200°C for 35–40 minutes. Do not poach it; there is already more than enough water in the fish, and a pot of liquid will finish the job of turning it to glue.
  6. Serve with bacon and its fat spooned over, mushy peas, almond potatoes and mustard. The texture is the point of the dish and no recipe will talk you into liking it — this is one you find out about.
