
🇳🇴 How to Make Multekrem
Craving Multekrem? On FoodNeverComes the food never actually comes — so here's how to make real Multekrem at home, in about 15 min, with stuff you probably already have.
🛒 Ingredients

- 400g cloudberries (multer), fresh or thawed from frozen
- 400ml double cream, very cold
- 2–3 tbsp sugar, to taste
- a splash of vanilla, optional
- krumkake or almond biscuits, to serve
👩🍳 Method
- Taste a cloudberry first and sugar to that. They swing from honeyed to sharply tart depending on the season and the bog they came from, and a fixed quantity of sugar is a guess.
- Whip the cream to soft peaks only. Stiff cream turns grainy the moment you fold fruit through it.
- Sweeten the berries separately with the sugar and let them sit 5 minutes to release a little syrup.
- Fold the berries in with about four strokes of a spatula. It should be streaked amber and white, not a uniform pink — over-mixing crushes the berries and you lose the whole texture of the dish.
- Serve within the hour, in glasses, with a krumkake on the side. This is Christmas Eve dessert across Norway, and the berries are hand-picked from marshland by people who do not share the location.
