- 6 waxy potatoes, boiled and sliced thick
- 200g queso fresco or feta
- 3 tbsp ají amarillo paste
- 150ml evaporated milk
- 6 cream crackers
- 1 clove garlic
- lettuce, boiled egg and olives
👩🍳 Method
- Fry the garlic and ají paste in a little oil for 2 min to take the raw edge off.
- Blitz the cheese, evaporated milk, crackers and the fried paste until completely smooth.
- The crackers are the thickener — the sauce should coat a spoon thickly, not run off it. Add milk if it seizes.
- Lay the warm potato slices on lettuce.
- Pour the sauce generously over the top. It should hide the potatoes entirely.
- Boiled egg and a black olive on each. Served at room temperature.
