
🇵🇪 How to Make Ají de Gallina

- 3 chicken breasts, poached and shredded
- 4 slices white bread, soaked in 200ml milk
- 3 tbsp ají amarillo paste
- 1 onion and 3 cloves garlic, finely chopped
- 50g walnuts
- 50g grated parmesan
- boiled potato, rice, olives and boiled egg to serve
👩🍳 Method
- Poach the chicken in seasoned water, keep the stock, and shred the meat by hand.
- Fry the onion and garlic slowly until sweet, then stir in the ají amarillo paste and cook 3 min.
- Blitz the soaked bread, walnuts and the onion mixture with a little stock until completely smooth.
- Return to the pan, add the chicken and enough stock to make a thick, spoonable sauce.
- Stir in the parmesan off the heat.
- Serve over boiled potato with rice, a black olive and half a boiled egg. It should be creamy and mildly warm, not fiery.
