- 4 rocoto peppers (or large red peppers if you value your mouth)
- 300g beef mince
- 1 onion, chopped
- 2 cloves garlic
- 50g raisins and 50g chopped olives
- 2 boiled eggs, chopped
- 100g queso fresco
- 200ml evaporated milk, 1 egg
👩🍳 Method
- Cut the tops off the rocotos and scoop out the seeds and all the white pith — that is where the heat lives.
- Boil them in water with a spoon of sugar, three times, changing the water each time. Skip this and the dish is genuinely inedible.
- Fry the onion, garlic and mince, then stir in the raisins, olives and boiled egg. Season well.
- Stuff the peppers, top each with a slice of queso fresco and put the lids back on.
- Sit them in a dish, pour round the evaporated milk beaten with the egg.
- Bake at 180°C for 35 min until set and bubbling. Arequipa considers this a point of civic pride.
