- 3 cups plain flour
- ¾ cup sugar
- 1 tbsp baking powder
- 1 tsp salt
- 2 tsp grated nutmeg
- 1 tsp cinnamon
- 100g butter, cold and cubed
- 1 cup coconut milk
- 1 egg, beaten, for glazing
👩🍳 Method
- Whisk the dry ingredients including the spices. Powder bun is defined by its nutmeg — be heavier-handed than feels sensible.
- Rub the cold butter in to fine crumbs.
- Stir in the coconut milk and bring together into a stiff dough. It should be firmer than a scone dough.
- Do not overwork it. Shape into thick rounds and set well apart on a lined tray.
- Brush with beaten egg and bake at 190°C for 22–25 min until risen and dark golden.
- Cool on a rack. It is dry, dense and spiced by design — a bun to be eaten with tea or cheese, not a cake, and it keeps for days.
