
🇳🇬 How to Make Puff Puff

- 2½ cups plain flour
- ¼ cup sugar
- 2¼ tsp instant yeast
- ½ tsp salt
- ¼ tsp grated nutmeg
- 1 cup warm water (more if needed)
- oil for deep frying
👩🍳 Method
- Whisk the yeast and sugar into the warm water and leave 5 min until it foams. Dead yeast means dense lumps.
- Mix flour, salt and nutmeg, then beat in the yeast water to a thick, sticky batter — looser than dough, thicker than pancake. It should fall off a spoon in a slow ribbon.
- Cover and leave somewhere warm for 1½–2 hours until doubled and visibly bubbly.
- Heat oil to 170°C. Too hot and you get raw centres, which is the classic puff puff failure.
- Scoop batter with a wet hand or ice cream scoop and drop rounds in. Fry 4–5 min, turning, until deep golden all over.
- Drain and eat warm, dusted with sugar if you like. Sold from a single wide pan on every Lagos street corner by evening.
