  1. Whisk the yeast and sugar into the warm water and leave 5 min until it foams. Dead yeast means dense lumps.
  2. Mix flour, salt and nutmeg, then beat in the yeast water to a thick, sticky batter — looser than dough, thicker than pancake. It should fall off a spoon in a slow ribbon.
  3. Cover and leave somewhere warm for 1½–2 hours until doubled and visibly bubbly.
  4. Heat oil to 170°C. Too hot and you get raw centres, which is the classic puff puff failure.
  5. Scoop batter with a wet hand or ice cream scoop and drop rounds in. Fry 4–5 min, turning, until deep golden all over.
  6. Drain and eat warm, dusted with sugar if you like. Sold from a single wide pan on every Lagos street corner by evening.
