
🇵🇪 How to Make Anticuchos

🛒 Ingredients

- 600g beef heart (or rump), in 3cm cubes
- 3 tbsp ají panca paste
- 4 cloves garlic, crushed
- 3 tbsp red wine vinegar
- 1 tsp cumin
- 1 tsp oregano
- oil, salt, pepper
👩🍳 Method
- Trim the heart of any sinew and fat. It is lean, cheap and tastes like very good steak, so do not be squeamish.
- Mix the marinade and turn the meat through it. Leave at least 4 hrs, overnight is better.
- Thread onto skewers, 3–4 pieces each, pushed close together.
- Grill over the fiercest heat you can manage, 2 min a side. Any longer and it turns to rubber.
- Baste with leftover marinade as they cook — it chars into a dark crust.
- Serve with boiled potato and green ají sauce. Street food, eaten off the skewer.
