- 100g small sago pearls
- 200g gulaman (agar) or 1 sachet agar powder
- 200g brown sugar
- 1L water
- 1 tsp vanilla
- ice
👩🍳 Method
- Boil the sago pearls in plenty of water 15 min, then take off the heat, cover and rest 10 min until translucent all the way through.
- Rinse them in cold water so they stop cooking and don't clump.
- Make the gulaman per the packet, set it in a shallow tray, then cut into small cubes.
- Melt the brown sugar in the water with the vanilla to make a dark arnibal syrup, and chill it.
- Combine the sago, gulaman cubes and syrup in a tall glass with ice.
- The texture is the point — chewy pearls, slippery jelly, cold sweet syrup.
