- 500ml whole milk
- 2 tbsp salep powder (or 1 tbsp cornflour as a stand-in)
- 2 tbsp sugar
- ground cinnamon to finish
👩🍳 Method
- Whisk the salep powder and sugar into the cold milk before it goes near the heat. Adding it to hot milk guarantees lumps.
- Bring slowly to a simmer, whisking constantly.
- Simmer 5 min until it thickens to a pourable, silky custard that coats the spoon.
- Pour into cups and dust heavily with cinnamon.
- Real salep is made from wild orchid tubers and is now export-restricted, so most versions abroad use a cornflour blend — it works, it is just less perfumed.
- Drink it hot, ideally outdoors, ideally in the cold.
