
🇵🇭 How to Make Sisig

🛒 Ingredients

- 500g pork belly and 200g pig's ears (or just belly)
- 1 onion, finely chopped
- 4 green chillies, chopped
- juice of 4 calamansi or 1 lemon
- 3 tbsp soy sauce
- 1 egg
- 1 tbsp butter
- salt, pepper
👩🍳 Method
- Simmer the pork with salt and peppercorns for 45 min, then cool.
- Grill or roast the boiled pork until the edges char properly. The char is not optional — sisig is a smoky dish.
- Chop everything into small dice. Small, not minced.
- Toss with the onion, chillies, citrus and soy.
- Serve on a screaming hot cast-iron plate with the butter, so it sizzles all the way to the table.
- Crack the raw egg over at the table and stir it through the hot pork so it just cooks.
