- 500g purple yam (ube), boiled and grated, or 250g frozen ube purée
- 400ml coconut milk
- 400g tin condensed milk
- 100g butter
- 1 tsp vanilla
👩🍳 Method
- Boil and mash the ube until completely smooth, or thaw the frozen purée.
- Melt the butter in a heavy pan, add the ube and cook 5 min.
- Add the coconut milk and condensed milk and stir.
- Now stir. Continuously, over low heat, for 40 minutes. It thickens slowly and will catch and scorch the moment you wander off.
- It is ready when a spoon dragged through leaves a clean line that holds.
- Pack into a jar while hot and brush the top with butter. Eaten by the spoonful, or used in halo-halo and ice cream.
