- Grind the cardamom yourself from the pods. Pre-ground cardamom loses almost everything within weeks, and this batter is essentially flour, dairy and cardamom — there is nowhere for a weak spice to hide.
- Whisk the eggs and sugar until pale, then alternate the milk and the dry ingredients, finishing with the melted butter.
- Rest the batter 20 minutes. The flour hydrates and the waffles come out tender instead of rubbery.
- Cook in a heart-shaped Norwegian waffle iron until golden. A Belgian iron makes something thicker and drier — these are meant to be thin, soft and foldable.
- Slice the brown cheese with a cheese plane in thin sheets and lay it on while the waffle is hot so it half-melts. Thick slabs stay waxy and overwhelm it.
- Sour cream and jam on top. This is afternoon coffee in Norway, on ferries, at cabins, and at every church bazaar in the country.
