
🇳🇬 How to Make Zobo

🛒 Ingredients

- 2 cups dried hibiscus petals (zobo leaves), rinsed
- 1 thumb ginger, sliced
- 1 stick cinnamon, 4 cloves
- 1 pineapple, skin and core only (keep the flesh for eating)
- 2 large oranges, juiced
- sugar or honey to taste
- 8 cups water
👩🍳 Method
- Rinse the hibiscus twice in cold water — dried petals carry grit.
- Boil the water with the ginger, cinnamon, cloves and pineapple skin for 10 min before the hibiscus goes anywhere near it.
- Add the hibiscus, boil 5 min, then take it off the heat and steep 20 min. Boiling it longer pulls out a green, tannic bitterness.
- Strain through a fine sieve, pressing the petals.
- Sweeten while warm so the sugar dissolves, then stir in the orange juice once cool — heat kills its freshness.
- Chill hard and serve over ice. It is deep magenta, tart, and should never be served lukewarm.
