
🇵🇪 How to Make Alfajores

🛒 Ingredients

- 200g cornflour
- 100g plain flour
- 150g butter, soft
- 50g icing sugar
- 2 egg yolks
- ½ tsp baking powder
- 1 jar dulce de leche
- icing sugar to dust
👩🍳 Method
- Beat the butter and icing sugar until pale, then beat in the yolks.
- Fold in the cornflour, flour and baking powder. The high cornflour ratio is why alfajores crumble the way they do.
- Chill the dough 30 min, then roll to 5mm and cut small rounds.
- Bake at 170°C for 10–12 min. They should stay pale — colour means overbaked.
- Cool completely on the tray. They are extremely fragile warm.
- Sandwich generously with dulce de leche and bury in icing sugar.
