
🇧🇿 How to Make Boil Up

🛒 Ingredients

- 500g pigtail or salt beef, soaked overnight to de-salt
- 4 eggs
- 2 green plantains, 1 cassava, 2 sweet potatoes, 1 cocoyam — all peeled and chunked
- for the dumplings: 1½ cups flour, ½ tsp salt, water
- 2 fillets of fish (optional, added last)
- 1 onion, 2 cloves garlic
- salt, black pepper
- water to cover
👩🍳 Method
- Soak the salted meat overnight and change the water twice, then boil it 30 min. Skip this and the pot is inedible.
- Add the cassava and cocoyam first — they take longest, about 20 min.
- Make the dumplings: flour, salt and just enough water for a stiff dough. Roll into fat fingers. They should be dense, not fluffy.
- Layer in the plantain, sweet potato and dumplings and cook 15 min more. The pot is built in stages so nothing turns to mush.
- Add the whole eggs in their shells for the last 10 min, and the fish for the last 6.
- Serve everything in a wide bowl with plenty of the broth. Boil up is a Kriol one-pot and the order of the layers is genuinely the recipe.
