
🇬🇷 How to Make Dolmades

🛒 Ingredients

- 1 jar vine leaves in brine (about 30)
- 200g long-grain rice
- 1 onion, very finely chopped
- a big handful each of dill, mint and parsley
- juice of 2 lemons
- 5 tbsp olive oil
- salt, pepper
👩🍳 Method
- Rinse the vine leaves well and blanch them 2 min to soften. Pat dry.
- Mix the raw rice, onion, herbs, half the lemon juice, 3 tbsp oil and plenty of seasoning.
- Lay a leaf vein-side up, put a teaspoon of filling near the stem, fold the sides in and roll tight but not straining — the rice needs room to swell.
- Pack them seam-side down in a snug pan, lined with any torn leaves.
- Add water to just cover, the rest of the lemon and oil, and a plate on top to weigh them down.
- Simmer gently 45 min. Cool in the pan. Always better cold the next day.
