
🇬🇷 How to Make Moussaka

🛒 Ingredients

- 3 aubergines, sliced 1cm
- 500g lamb or beef mince
- 1 onion, chopped
- 2 cloves garlic
- 400g tin chopped tomatoes
- 1 tsp cinnamon, ½ tsp allspice
- Béchamel: 80g butter, 80g flour, 700ml milk, 2 egg yolks, 50g grated cheese
- olive oil, salt
👩🍳 Method
- Salt the aubergine slices and leave 30 min, then pat dry. Roast at 200°C for 20 min until golden.
- Fry the onion and garlic, add the mince and brown it hard. Add tomatoes, cinnamon and allspice.
- Simmer the meat sauce 30 min until thick and almost dry. Watery sauce ruins the layers.
- Béchamel: melt butter, cook the flour 2 min, whisk in the milk gradually, thicken, then beat in the yolks and cheese off the heat.
- Layer: aubergine, meat, aubergine, then all the béchamel on top.
- Bake at 180°C for 45 min until deeply browned. Rest 30 min before cutting or it slides apart.
