
🇬🇷 How to Make Pastitsio

🛒 Ingredients

- 500g bucatini or thick tubular pasta
- 500g beef mince
- 1 onion, 2 cloves garlic
- 400g tin chopped tomatoes
- 1 tsp cinnamon
- Béchamel: 100g butter, 100g flour, 1L milk, 2 eggs, 100g kefalotyri or parmesan

👩🍳 Method
- Cook the pasta 2 min short of the packet time and toss it with a little butter so it doesn't clump.
- Make the meat sauce as for moussaka — onion, garlic, mince browned hard, tomatoes, cinnamon, simmered thick.
- Make a thick béchamel, then beat in the eggs and most of the cheese off the heat, plus plenty of nutmeg.
- Layer half the pasta, all the meat, then the rest of the pasta. Press it down flat.
- Pour the béchamel over and rake a fork through the top so it catches colour.
- Bake at 180°C for 45 min. Rest 20 min. It should cut into clean squares.
