
🇬🇷 How to Make Kleftiko

🛒 Ingredients

- 1kg lamb shoulder, in big chunks
- 3 potatoes, quartered
- 2 cloves garlic, slivered
- 1 lemon, juice and zest
- 2 tsp dried oregano
- 100g feta, crumbled
- olive oil, salt, pepper
👩🍳 Method
- Heat the oven to 160°C. Stab the lamb and push slivers of garlic into the holes.
- Toss everything except the feta together with plenty of oil, lemon, oregano and seasoning.
- Pile it into the middle of a big sheet of baking parchment set inside foil.
- Seal it into a tight parcel. Kleftiko means 'stolen' — it was cooked buried so no smoke gave the thieves away, and the sealed parcel is the modern version.
- Bake 2.5–3 hrs. Do not open it to check; the steam is doing the work.
- Tear the parcel open at the table, scatter the feta over the top and let it melt in.
