
🇬🇧 How to Make Eton Mess

🛒 Ingredients

- 500g strawberries, hulled and quartered
- 2 tbsp caster sugar
- 1 tsp balsamic vinegar (optional)
- 400ml double cream, cold
- 1 tsp vanilla
- 4 ready-made meringue nests, roughly broken
👩🍳 Method
- Macerate two thirds of the strawberries with the sugar and the balsamic for 15 minutes. They slump and give up a syrup, and that syrup is what marbles through the cream.
- Crush those macerated berries lightly with a fork. Keep the remaining third whole for texture — an all-crushed mess goes uniformly pink and loses its point.
- Whip the cream with the vanilla to soft peaks only. Stiff cream will not fold and the dessert turns stodgy.
- Fold the meringue, the crushed fruit and the syrup through the cream with three or four strokes. It should be streaked, not blended. The name is mess and it is being honest.
- Add the whole berries last and serve within 20 minutes — beyond that the meringue dissolves completely and you have a bowl of pink cream.
- Named after the school where it is said to have been dropped at a cricket match, and none the worse for it.
