
🇮🇹 How to Make Gelato
Craving Gelato? On FoodNeverComes the food never actually comes — so here's how to make real Gelato at home, in about 5 hrs, with stuff you probably already have.
🛒 Ingredients

- 2 cups whole milk + 1 cup cream
- ¾ cup sugar, split in half
- 4 egg yolks
- 2 tsp vanilla (or 100g melted dark chocolate)
- a pinch of salt
👩🍳 Method
- Warm the milk, cream and half the sugar until it steams. No boiling — just hot.
- Whisk the yolks with the other half of the sugar until pale. Pour the hot milk in slowly, whisking the whole time.
- Back on low heat, stir until it thickens enough to coat a spoon, about 5 min. If you can draw a line on the spoon with your finger, it's ready.
- Stir in vanilla (or chocolate) and salt, then chill it completely — 2 hours. Cold base = creamy gelato, warm base = ice crystals.
- Churn in a machine 20 min. No machine? Freeze in a tray and beat with a fork every 30 min, 4 times. Works honestly fine.
- Freeze 1 hour more, then take it out 10 min before scooping. That's the silky window. You made real gelato.
