- 400g spaghetti
- 400g beef mince
- 1 onion + 1 carrot + 1 celery stick, diced small
- 2 tbsp tomato paste + 400g passata
- ½ cup milk
- 2 tbsp olive oil + salt + pepper
- parmesan for the summit
👩🍳 Method
- Cook the diced veg in oil on medium for 8 min until soft and sweet. Don't rush this — it's the base of everything.
- Turn up the heat, add the beef, and brown it for real: 6 min, breaking it up, letting it catch here and there.
- Stir in the tomato paste, then passata, milk and 1 tsp salt.
- Simmer on the lowest heat for 40 min. Stir when you walk past. The sauce is ready when it's thick and the top glistens.
- Cook the spaghetti in salty water until al dente. Scoop out a mug of the water before draining.
- Toss the pasta in the sauce pan with a splash of that water for one minute. Mountain of parmesan on top. Buonissimo — and you barely tried.
