- 250g mascarpone, at room temperature
- 3 fresh eggs, yolks and whites separated
- ⅓ cup sugar
- 1 cup strong coffee, cooled
- 20 ladyfinger biscuits
- 2 tbsp cocoa powder
👩🍳 Method
- Whisk the yolks with the sugar until pale and creamy, about 2 min. Fold in the mascarpone gently.
- Whip the whites to firm peaks, then fold them in softly. The fluff is the whole dessert — protect it.
- Dip each biscuit in the coffee for ONE second per side. Count it. They keep soaking after you stop.
- Layer: biscuits, half the cream, biscuits again, the rest of the cream.
- Fridge for 4 hours minimum — overnight if you can bear it. This is when it becomes tiramisu.
- Dust with cocoa right before serving. First bite quiet, second bite someone asks for the recipe.
The food never comes — but this time, you make it. 🍳
