
🇮🇹 How to Make Risotto
Craving Risotto? On FoodNeverComes the food never actually comes — so here's how to make real Risotto at home, in about 35 min, with stuff you probably already have.
🛒 Ingredients

- 1½ cups arborio rice (don't rinse it — the starch is the sauce)
- 5 cups warm stock, kept on the stove
- 1 small onion, diced fine
- ½ cup white wine
- 3 tbsp butter + 2 tbsp olive oil
- 60g parmesan, grated
👩🍳 Method
- Keep the stock warm in a pot next to you — you'll be visiting it a lot.
- Soften the onion in oil and half the butter, 4 min, no browning.
- Add the rice and stir 2 min until the edges look glassy. It'll smell faintly nutty — that's your cue.
- Wine in, stir until it disappears. Then add stock one ladle at a time, stirring, waiting until each is absorbed. About 18 min. Put music on.
- Taste at 16 min: soft with a tiny bite in the middle = perfect. It should flow like slow lava, not stand like mash.
- Off the heat, beat in the rest of the butter and all the parmesan. That final stir is where the creaminess comes from. Serve immediately, feel fancy.
