
🇬🇷 How to Make Greek Coffee

🛒 Ingredients

- 1 heaped tsp very finely ground coffee
- 1 small cup cold water
- sugar to taste (none = sketos, 1 tsp = metrios, 2 = glykos)
👩🍳 Method
- Measure the water with the cup you will drink from, into a briki or the smallest pan you own.
- Add the coffee and sugar to the COLD water and stir once to combine.
- Put it on the lowest heat possible. This must be slow — 3 to 4 minutes.
- Watch for the foam rising up the sides. The instant it reaches the rim, take it off. Never let it boil.
- Pour gently, foam first. That foam, the kaimaki, is how the coffee is judged.
- Do not stir it after pouring, and stop drinking when you reach the grounds at the bottom.
