- 500g chicken intestines, cleaned very thoroughly
- 3 tbsp soy sauce
- 2 tbsp vinegar
- 1 tbsp brown sugar
- 3 cloves garlic
- 1 tsp pepper
- bamboo skewers
- spiced vinegar to dip
👩🍳 Method
- Clean the intestines exhaustively — turn them inside out, rinse repeatedly with salt, and rinse again. This is the whole job.
- Boil them 20 min with a bay leaf, then cool.
- Thread onto skewers in a concertina.
- Marinate at least 2 hrs in the soy, vinegar, sugar, garlic and pepper.
- Grill over charcoal, basting often, until the edges char and crisp, about 8 min.
- Dunk in spiced vinegar. Classic Filipino street food, sold outside schools at 4pm.
The food never comes — but this time, you make it. 🍳
