
🇹🇷 How to Make Karnıyarık

🛒 Ingredients

- 4 small aubergines
- 300g lamb mince
- 1 onion, chopped
- 2 tomatoes, chopped, plus 4 slices for the top
- 2 green peppers, sliced
- 2 tbsp tomato paste
- oil for frying
👩🍳 Method
- Peel the aubergines in stripes, leaving alternating bands of skin, and fry them whole in oil until soft and collapsed. Drain on paper.
- Fry the onion, add the mince and brown it, then the chopped tomatoes and 1 tbsp of the paste. Cook until dry.
- Slit each aubergine lengthways without cutting through, and press the middle open into a boat.
- Stuff generously with the mince, then lay a tomato slice and a strip of pepper on each.
- Sit them in a dish, add the remaining paste whisked into 150ml hot water around them.
- Bake at 190°C for 30 min. Karnıyarık means 'split belly', which is exactly what it looks like.
