
🇹🇷 How to Make Lahmacun

🛒 Ingredients

- Base: 250g flour, 5g yeast, 150ml warm water, ½ tsp salt
- 200g lamb mince
- 1 onion, 1 tomato, 1 red pepper, all blitzed to a paste
- 1 tbsp tomato paste
- 1 tsp pul biber, ½ tsp cumin
- parsley and lemon to serve
👩🍳 Method
- Make a soft dough, knead 5 min and leave 30 min.
- Blitz the vegetables to a rough paste, then squeeze out as much liquid as you can. Wet topping means soggy base.
- Mix with the mince, tomato paste and spices.
- Roll the dough as thin as you physically can — lahmacun should be almost translucent.
- Spread the meat in a very thin layer right to the edges. Thin is the entire discipline of this dish.
- Bake at the highest temperature your oven does, on a preheated tray, 6–8 min. Parsley, lemon, roll it up.
