
🇬🇷 How to Make Kataifi

- 400g kataifi (shredded filo), teased apart
- 200g butter, melted
- 250g walnuts, chopped
- 1 tsp cinnamon
- Syrup: 350g sugar, 250ml water, 1 tbsp honey, 1 strip lemon peel
👩🍳 Method
- Make the syrup, simmer 10 min, then cool it completely. The hot-pastry-cold-syrup rule applies here too.
- Pull the kataifi apart with your fingers until it is fluffy, not matted. This takes longer than you expect.
- Toss it thoroughly with the melted butter so every strand is coated.
- Take a small handful, flatten it, put a spoon of walnuts and cinnamon at one end and roll into a fat cigar.
- Pack the rolls tightly in a buttered tin and bake at 170°C for 45 min until crisp and golden.
- Cold syrup over hot pastry, then leave it several hours to drink it all up.
