
🇳🇬 How to Make Kuli Kuli

🛒 Ingredients

- 3 cups roasted groundnuts, skins removed
- 1 tsp ground ginger
- 1 tsp cayenne
- 1 tsp salt
- 1 small onion, blended and drained (optional)
- oil for frying
👩🍳 Method
- Blitz the roasted groundnuts to a thick, oily paste. Here you DO want it to go past powder into butter.
- Knead the paste in a bowl and squeeze it hard, pouring off the oil that separates. Keep squeezing until the paste is dry and crumbly — this can take 10 min and is the entire recipe.
- Work the ginger, cayenne, salt and drained onion through the dry paste.
- Shape into short sticks or flat rounds, pressing firmly so they hold.
- Fry in shallow oil at a moderate heat for 5–6 min, turning, until hard and deep brown.
- Drain on paper and cool completely — kuli kuli crisps as it cools. Crumbled over garri and cold water, it is a whole meal in the north.
