  1. Blitz the roasted groundnuts to a thick, oily paste. Here you DO want it to go past powder into butter.
  2. Knead the paste in a bowl and squeeze it hard, pouring off the oil that separates. Keep squeezing until the paste is dry and crumbly — this can take 10 min and is the entire recipe.
  3. Work the ginger, cayenne, salt and drained onion through the dry paste.
  4. Shape into short sticks or flat rounds, pressing firmly so they hold.
  5. Fry in shallow oil at a moderate heat for 5–6 min, turning, until hard and deep brown.
  6. Drain on paper and cool completely — kuli kuli crisps as it cools. Crumbled over garri and cold water, it is a whole meal in the north.
