
🇮🇳 How to Make Masala Dosa

🛒 Ingredients

- 3 cups dosa batter (store-bought is totally fine)
- 3 boiled potatoes, roughly mashed
- 1 onion, sliced thin
- 1 tsp mustard seeds + 10 curry leaves
- ½ tsp turmeric + ¾ tsp salt
- 3 tbsp ghee or oil
- coconut chutney, to serve
👩🍳 Method
- Heat 1 tbsp ghee, pop the mustard seeds (they'll jump — that's good), add curry leaves for 10 seconds.
- Add the onion, cook 3 min until golden. Stir in turmeric, salt and the potatoes. Your filling is done — taste it, it should already make you happy.
- Heat a flat pan on medium-high. Sprinkle water — if it dances, you're ready.
- Pour ⅓ cup batter in the centre and spread it outward in circles with the ladle. If the first one tears, that's the rule, not you.
- Drizzle 1 tsp ghee around the edge. Wait 2 min — no flipping — until it's golden and lifts by itself.
- Put a line of potato in the middle, fold both sides over, done. Serve hot with chutney. You just made a dosa on your first try.
