🛒 Ingredients

- 2 cups chickpeas, soaked overnight (or 3 cups canned)
- 2 onions + 3 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 2 tbsp chole masala + 1 tsp cumin seeds + salt
- 1 black tea bag (trust us — it makes the colour)
- Bhature: 2 cups flour + ¼ cup yogurt + ½ tsp baking powder + 1 tsp sugar + water
- oil for frying
👩🍳 Method
- Cook the chickpeas with the tea bag until soft (20 min pressure cooker, 10 min if canned). Remove the bag, keep the water.
- Mix the bhature dough — soft, not sticky. Cover it and let it rest somewhere warm while you cook.
- Fry cumin, then onions until golden (6 min). Add ginger-garlic, then tomatoes and masala until the oil peeks out at the edges.
- Add chickpeas + 1½ cups of their water. Simmer 15 min, mash a few against the pot to thicken. Dark, thick, done.
- Roll the dough into 6 ovals. Fry one at a time in hot oil — press gently and watch it balloon. That moment never gets old.
- Eat right away with raw onion and lemon. Hands, not forks. This is the rule.
