  1. Make the syrup first: boil sugar, water and cardamom 5 min, then keep it warm on the lowest flame.
  2. Mix milk powder, flour and soda. Add the ghee, then milk spoon by spoon until a soft dough forms. Stop mixing the second it comes together.
  3. Roll 16 small balls with greased hands. Smooth them well — smooth now means no cracks later.
  4. Fry on LOW heat (the balls should rise slowly, not shoot up). Stir gently 7–8 min until deep brown.
  5. Drop them straight into the warm syrup. Walk away for 30 minutes — they'll drink it up and double in size.
  6. Serve warm. Soft, syrupy, melts in the mouth — and yes, you made these from milk powder.
