- 400g chicken thigh, cut in big cubes
- Marinade: 3 tbsp yogurt, 1 tbsp ginger-garlic paste, 1 tsp chilli powder, 1 tsp garam masala, squeeze of lime
- 3 tbsp butter + 1 tbsp oil
- 1 large onion, finely chopped
- 1 cup tomato passata
- 1 tsp each cumin, paprika, garam masala
- ½ cup cream + 1 tsp sugar
- fresh coriander + one more knob of butter to finish
👩🍳 Method
- Massage the marinade into the chicken. Even 15 minutes helps; overnight is glorious.
- Sear the chicken in 1 tbsp butter + the oil over high heat until charred at the edges but not cooked through. Set aside — those charred bits are your tandoor substitute.
- In the same pan, soften the onion in 2 tbsp butter for 5–6 min until golden, not just translucent.
- Add the spices for 30 seconds until fragrant, then the passata. Simmer 8–10 min until it darkens and the butter starts separating at the edges — that's when the raw tomato taste is gone.
- Return the chicken, simmer gently 5 min to cook through, then stir in the cream and sugar and warm WITHOUT boiling.
- Taste: rich, gently sweet, mildly spiced. Finish with the last knob of butter and coriander. Serve with naan or rice — and use the naan as a spoon like everyone secretly does.
