
🇹🇭 How to Make Pad Thai

🛒 Ingredients

- 200g flat dried rice noodles (5mm)
- 2 eggs
- 200g prawns or firm tofu cubes
- Sauce: 3 tbsp tamarind paste, 2 tbsp fish sauce, 2 tbsp palm or brown sugar
- 2 cloves garlic, chopped
- 2 big handfuls bean sprouts + 3 spring onions in batons
- ¼ cup roasted peanuts, crushed + lime wedges + chilli flakes
👩🍳 Method
- Soak the noodles in hot-tap-temperature water about 20 min, until bendy but still too firm to eat. They finish cooking in the pan — pre-boiled noodles turn to mush.
- Stir the sauce together until the sugar dissolves. Taste it: sour first, then salty, then sweet.
- Get a wok or big pan properly hot with 2 tbsp oil. Fry the prawns/tofu until just done and push to one side.
- Garlic in for 10 seconds, then crack in the eggs, scramble roughly, and let them set slightly.
- Add the drained noodles and the sauce; toss constantly 2–3 min. Still stiff? Splash of water and keep tossing until chewy-soft.
- Throw in the sprouts and spring onion for 30 seconds — they should stay crunchy.
- Plate, blanket with crushed peanuts, and serve with lime and chilli flakes so everyone tunes their own.
