  1. Soak the noodles in hot-tap-temperature water about 20 min, until bendy but still too firm to eat. They finish cooking in the pan — pre-boiled noodles turn to mush.
  2. Stir the sauce together until the sugar dissolves. Taste it: sour first, then salty, then sweet.
  3. Get a wok or big pan properly hot with 2 tbsp oil. Fry the prawns/tofu until just done and push to one side.
  4. Garlic in for 10 seconds, then crack in the eggs, scramble roughly, and let them set slightly.
  5. Add the drained noodles and the sauce; toss constantly 2–3 min. Still stiff? Splash of water and keep tossing until chewy-soft.
  6. Throw in the sprouts and spring onion for 30 seconds — they should stay crunchy.
  7. Plate, blanket with crushed peanuts, and serve with lime and chilli flakes so everyone tunes their own.
