- 200g flat rice noodles
- 2 eggs
- 1 cup prawns or tofu
- 3 tbsp tamarind + 2 tbsp fish sauce + 1 tbsp sugar
- peanuts, lime, bean sprouts
- 2 cloves garlic

- Soak noodles in warm water until pliable.
- Fry garlic + prawns/tofu; push aside and scramble the egg.
- Add drained noodles + tamarind, fish sauce, sugar; toss 2 min.
- Fold in sprouts; plate with crushed peanuts + lime.
