
🇵🇪 How to Make Picarones
Craving Picarones? On FoodNeverComes the food never actually comes — so here's how to make real Picarones at home, in about 1 hr, with stuff you probably already have.
🛒 Ingredients

- 300g sweet potato and 200g squash, boiled and puréed
- 400g flour
- 7g yeast
- 1 tsp anise seeds
- oil for frying
- Syrup: 200g chancaca or dark brown sugar, 200ml water, 1 orange peel, 1 cinnamon stick
👩🍳 Method
- Boil the sweet potato and squash with the anise seeds, then purée them and cool to lukewarm.
- Mix with the yeast and flour into a very wet, sticky dough. It should be closer to a batter.
- Cover and leave 1 hr until puffy and bubbling.
- Simmer the syrup ingredients 20 min until it coats a spoon, then strain.
- Wet your hands, take a blob of dough and poke a hole through the middle with your thumb, stretching it into a ring. Drop into 180°C oil.
- Fry until deep gold, 2 min. Drain, stack, and pour the warm syrup over.
