- 500g flour
- 1 egg
- 250ml warm water
- 1 tbsp oil, 1 tsp salt
- Filling: 500g potatoes, boiled and mashed, 250g twaróg or ricotta, 1 onion fried in butter
- butter and fried onion to serve
- soured cream
👩🍳 Method
- Make a soft dough with the flour, egg, water, oil and salt. Knead 8 min, then rest it under a warm bowl 30 min. Resting is what makes it roll thin without springing back.
- Mash the potato with the cheese and fried onion, and season it much more heavily than feels right — the dough is bland.
- Roll the dough thin and cut 8cm rounds.
- Put a spoon of filling on each, fold and pinch the edge firmly. Dry edges seal; floury ones don't.
- Boil in batches in well-salted water. They are done about 2 min after they float.
- Fry the boiled pierogi in butter with onion until blistered. Soured cream on the side.
The food never comes — but this time, you make it. 🍳
