
🇵🇱 How to Make Rosół

🛒 Ingredients

- 1 whole chicken or 1kg chicken pieces
- 500g beef shin, optional but better
- 2 carrots, 1 parsnip, ¼ celeriac
- 1 onion, halved and charred
- a bunch of parsley and lovage
- 5 peppercorns, 2 bay leaves
- fine noodles to serve
👩🍳 Method
- Char the onion halves cut-side down in a dry pan until properly black. This is where the colour comes from.
- Cover the meat with COLD water and bring it up very slowly. Starting cold draws the flavour out into the broth.
- Skim every bit of grey foam in the first 20 min. Miss this and the soup will be cloudy for good.
- Add the vegetables, charred onion, peppercorns and bay. Now never let it boil — a bare tremble for 2 hrs.
- Strain through muslin. It should be golden and completely clear.
- Serve over cooked noodles with a shower of parsley. Every Polish grandmother judges this soup on clarity alone.
