  1. Cut all the fruit into rough bite-sized chunks and keep it cold until the last minute.
  2. Hae ko has the consistency of tar. Loosen it with a spoonful of warm water first or it will never mix with anything.
  3. Whisk in the palm sugar, tamarind, chilli and lime until glossy and pourable. Taste: it should be salty, sweet, sour and slightly funky, in that order.
  4. Dress the fruit only when you are ready to eat. Dressed early, it weeps and the sauce turns watery.
  5. Toss hard so every piece is coated black.
  6. Bury it under crushed peanuts and sesame. Eaten with a toothpick, standing up, ideally in an alley.
