🛒 Ingredients

- 1 green mango, ½ pineapple, 1 small jicama (sengkuang), 1 cucumber, 1 guava
- Sauce: 3 tbsp hae ko (thick prawn paste), 2 tbsp palm sugar, 2 tbsp tamarind water, 1 tsp chilli paste, juice of ½ lime
- 100g roasted peanuts, roughly crushed
- 1 tbsp toasted sesame seeds
👩🍳 Method
- Cut all the fruit into rough bite-sized chunks and keep it cold until the last minute.
- Hae ko has the consistency of tar. Loosen it with a spoonful of warm water first or it will never mix with anything.
- Whisk in the palm sugar, tamarind, chilli and lime until glossy and pourable. Taste: it should be salty, sweet, sour and slightly funky, in that order.
- Dress the fruit only when you are ready to eat. Dressed early, it weeps and the sauce turns watery.
- Toss hard so every piece is coated black.
- Bury it under crushed peanuts and sesame. Eaten with a toothpick, standing up, ideally in an alley.
