
🇵🇱 How to Make Sernik
Craving Sernik? On FoodNeverComes the food never actually comes — so here's how to make real Sernik at home, in about 1 hr 30 min, with stuff you probably already have.
🛒 Ingredients

- 1kg twaróg (Polish curd cheese) — ricotta is a distant second
- 200g sugar
- 5 eggs, separated
- 100g butter, soft
- 2 tbsp potato starch
- zest of 1 lemon
- 1 tsp vanilla
👩🍳 Method
- Push the twaróg through a sieve twice, or blitz it until absolutely smooth. Any grain in the cheese will show up in the finished cake.
- Beat the butter and sugar until pale, then add the yolks one at a time.
- Fold in the cheese, starch, zest and vanilla.
- Whisk the whites to soft peaks and fold them through in three additions.
- Bake at 160°C for 60–70 min. Then turn the oven off and leave the door ajar with the cake inside for an hour — a sudden temperature drop cracks it straight down the middle.
- Chill overnight. Sernik is a next-day cake.
