  1. Push the twaróg through a sieve twice, or blitz it until absolutely smooth. Any grain in the cheese will show up in the finished cake.
  2. Beat the butter and sugar until pale, then add the yolks one at a time.
  3. Fold in the cheese, starch, zest and vanilla.
  4. Whisk the whites to soft peaks and fold them through in three additions.
  5. Bake at 160°C for 60–70 min. Then turn the oven off and leave the door ajar with the cake inside for an hour — a sudden temperature drop cracks it straight down the middle.
  6. Chill overnight. Sernik is a next-day cake.
