
🇰🇷 How to Make Sikhye
Craving Sikhye? On FoodNeverComes the food never actually comes — so here's how to make real Sikhye at home, in about 4 hr, with stuff you probably already have.
🛒 Ingredients

- 100g cooked short-grain rice
- 60g malt barley powder
- 1.5L water
- 120g sugar
- pine nuts to float on top
👩🍳 Method
- Soak the malt powder in the water for an hour, then strain it through a cloth and let the cloudy liquid settle.
- Pour off the clear liquid at the top and leave the starchy sludge behind — that sludge is what turns the drink gritty.
- Warm the clear malt water to 60°C, stir in the cooked rice, and hold it there for 4 hours until the grains float.
- Scoop out the floating rice and rinse it in cold water. Boil the liquid with the sugar, then chill it hard.
- Serve very cold with a spoonful of the reserved rice and a few pine nuts on top.
