
🇳🇱 How to Make Stamppot
Craving Stamppot? On FoodNeverComes the food never actually comes — so here's how to make real Stamppot at home, in about 45 min, with stuff you probably already have.
🛒 Ingredients

- 1.5kg floury potatoes, peeled and chunked
- 500g curly kale, stalks stripped, shredded very fine
- 200ml whole milk, warmed
- 75g butter
- 1 rookworst (smoked sausage)
- salt, black pepper, nutmeg
- mustard, to serve
👩🍳 Method
- Boil the potatoes in salted water for 20 min. Put the kale on top of them for the last 10 min so it steams rather than boils — boiled kale goes grey and sulphurous.
- Warm the rookworst gently in a separate pan of water. Never boil it; the skin splits and the fat runs out.
- Drain the potatoes and kale thoroughly and let them steam dry in the pan for 2 min. Wet stamppot is a sad stamppot.
- Mash with the warm milk and butter. Warm milk, always — cold milk makes it gluey.
- Season hard with salt, pepper and a lot of nutmeg. Stamppot is bland without nutmeg and nobody tells you that.
- Serve in a mound with a well pressed into the top, the sliced sausage laid over and mustard on the side. This is boerenkoolstamppot; swap the kale for endive or sauerkraut and it becomes a different Dutch winter.
