  1. Boil the potatoes in salted water for 20 min. Put the kale on top of them for the last 10 min so it steams rather than boils — boiled kale goes grey and sulphurous.
  2. Warm the rookworst gently in a separate pan of water. Never boil it; the skin splits and the fat runs out.
  3. Drain the potatoes and kale thoroughly and let them steam dry in the pan for 2 min. Wet stamppot is a sad stamppot.
  4. Mash with the warm milk and butter. Warm milk, always — cold milk makes it gluey.
  5. Season hard with salt, pepper and a lot of nutmeg. Stamppot is bland without nutmeg and nobody tells you that.
  6. Serve in a mound with a well pressed into the top, the sliced sausage laid over and mustard on the side. This is boerenkoolstamppot; swap the kale for endive or sauerkraut and it becomes a different Dutch winter.
