
🇳🇱 How to Make Kapsalon
Craving Kapsalon? On FoodNeverComes the food never actually comes — so here's how to make real Kapsalon at home, in about 30 min, with stuff you probably already have.
🛒 Ingredients

- 600g thick-cut chips (fries)
- 300g doner or shawarma meat
- 150g grated young gouda
- garlic sauce (knoflooksaus)
- sambal or hot sauce
- shredded iceberg lettuce, cucumber, tomato
- an aluminium takeaway tray
👩🍳 Method
- Fry the chips twice: once at 160°C for 6 min to cook through, rest them, then again at 190°C for 3 min to crisp. Single-fried chips go limp under the cheese, which defeats the dish.
- Pack the hot chips into a foil takeaway tray. The tray is not optional — it is where the name comes from and it is how the heat is held.
- Fry the doner meat hard in a dry pan until the edges are crisp.
- Layer the meat over the chips, then blanket the whole surface with grated gouda.
- Grill or oven at 220°C for 5 min, just until the cheese melts and blisters. Any longer and it turns to oil.
- Pile cold lettuce, cucumber and tomato on top and zigzag garlic sauce and sambal over everything. Invented in Rotterdam in 2003 by a hairdresser — kapsalon means hair salon — which is a well-documented and slightly improbable fact.
