
🇳🇱 How to Make Hachee
Craving Hachee? On FoodNeverComes the food never actually comes — so here's how to make real Hachee at home, in about 3 hr, with stuff you probably already have.
🛒 Ingredients

- 800g stewing beef, cubed
- 4 large onions, sliced
- 50g butter
- 3 tbsp plain flour
- 500ml beef stock
- 100ml vinegar or a splash of red wine vinegar
- 4 bay leaves, 6 cloves, 6 juniper berries
- 1 tbsp brown sugar
- 2 slices of gingerbread (ontbijtkoek), optional but traditional
- salt, black pepper
👩🍳 Method
- Pat the beef completely dry and brown it hard in the butter in batches. Crowded, wet meat steams and hachee needs that crust.
- Take the meat out and cook the onions in the same pot for 15 min until deeply soft and browning. There should be roughly as much onion as meat — this is an onion stew as much as a beef one.
- Stir the flour in and cook it out for 2 min.
- Return the beef, add the stock, vinegar, bay, cloves, juniper and sugar. The vinegar is what makes it hachee rather than generic beef stew.
- Cover and simmer very low for 2½ hours. Do not let it boil.
- In the last 20 min stir in the crumbled gingerbread to thicken and sweeten the gravy. Serve with boiled potatoes and red cabbage.
