
🇳🇱 How to Make Hutspot

- 1kg floury potatoes, peeled and chunked
- 750g carrots, sliced
- 3 onions, roughly chopped
- 100ml milk, warmed
- 60g butter
- 500g klapstuk (beef brisket) or smoked sausage
- salt, black pepper
- vinegar, a splash
👩🍳 Method
- Put the carrots and onions in the pan first with salted water and the potatoes on top. The carrots take longer and this stops the potatoes disintegrating.
- Boil 25 min until everything is very soft.
- If using brisket, simmer it separately for 2 hours beforehand and keep the broth.
- Drain well and steam dry, then mash roughly with the warm milk and butter. Hutspot should stay a little coarse — you want to see the carrot.
- Season, and add a small splash of vinegar. It lifts the sweetness of the carrot and most recipes leave it out.
- Serve with the sliced beef and a ladle of its broth. Legend ties it to the relief of Leiden in 1574, when the Spanish supposedly left a pot of it behind.
