- 500g silken tofu
- 100g small sago pearls, cooked
- 200g brown sugar
- 150ml water
- 1 slice ginger
- 1 tsp vanilla
👩🍳 Method
- Steam the silken tofu gently for 10 min so it is warm and set, then handle it as little as possible.
- Simmer the brown sugar, water and ginger into a thin dark syrup, 8 min. Strain out the ginger.
- Cook the sago separately until translucent and rinse.
- Scoop the warm tofu into a cup in wide, flat spoonfuls — the shallow scoop is how a taho vendor does it, and it keeps the silk intact.
- Spoon the sago over, then pour the warm syrup on top.
- Eaten warm, from a plastic cup, ideally bought from someone shouting 'TAHOOO' down your street at 6am.
The food never comes — but this time, you make it. 🍳
