  1. Steam the silken tofu gently for 10 min so it is warm and set, then handle it as little as possible.
  2. Simmer the brown sugar, water and ginger into a thin dark syrup, 8 min. Strain out the ginger.
  3. Cook the sago separately until translucent and rinse.
  4. Scoop the warm tofu into a cup in wide, flat spoonfuls — the shallow scoop is how a taho vendor does it, and it keeps the silk intact.
  5. Spoon the sago over, then pour the warm syrup on top.
  6. Eaten warm, from a plastic cup, ideally bought from someone shouting 'TAHOOO' down your street at 6am.
